Abstract:
This study was carried out in order to evaluate the effectiveness of a fermented iron-enriched milky drink in recovering the nutritional iron statuse in preschool children. The assessment of health status assessment o fin eighty-nine preschool children at two child care centers in Viçosa was performed before and after a milky drink intervention, by anthropometrical evaluation (weight, and height), food survey and hematological tests (hemoglobin, hematocrit, serum iron, and ferritin). The milky drink was elaborated on the basis of milk whey fortified with chelate amino acid iron and added by mango pulp, lactic yogurt culture (Streptococcus thermophilus and Lactobacillus delbrueckii ssp bulgaricus) and a probiotic culture (Lactobacillus acidophilus). Milky drink portions of 80 mL (4.1 mg iron) were provided to the children from Monday to Friday for 35 days. The milky drink increased daily iron intake from 50% to 94% of the RDA. The mean values of the z scores found for the initial weight/age and weight/height indexes in population were –0.36 and –0.30, respectively. The prevalence of anemia was 11.2%. No significant variation was verified in the mean values of weight/age and weight/height indexes with the drink intake. However, a significant increase (p < 0.01) of 25% (from 25.8 ng/dL to 33.1 ng/dL) in serum ferritin was observed at the end of the intervention. No significant change was observed in other hematimetric values. No association was found between anemia and malnutrition. The fortified product increased the children’s iron stores, thus constituting an alternative choice in preventing iron deficiency anemia. O presente trabalho visou avaliar a eficácia de uma bebida láctea fermentada e fortificada com ferro na recuperação do estado nutricional de ferro de pré-escolares. Foram estudados 89 préescolares assistidos por duas creches de Viçosa, MG, avaliando-se o estado de saúde antes e após a intervenção com uma bebida láctea, por meio de avaliação antropométrica (peso/estatura); inquérito alimentar e exame hematológico (hemoglobina, hematócrito, ferro sérico e ferritina). A bebida foi elaborada à base de soro de queijo fermentada e fortificada com ferro aminoácido-quelato, acrescida de polpa de manga, cultura láctica de iogurte (Streptococcus thermophilus e Lactobacillus delbrueckii ssp bulgaricus) e cultura probiótica (Lactobacillus acidophilus, sendo fornecida de segunda à sexta-feira, em porções de 80 mL (4,1 mg ferro), durante 35 dias. A bebida elevou os níveis médios de ingestão de ferro de 50% para 94% da RDA. Os valores médios de escores z encontrados para os índices peso/idade e peso/estatura iniciais foram –0,36 e –0,30, respectivamente. A prevalência de anemia encontrada foi 11,2%. Não foi verificada variação significativa nos valores médios dos índices peso/idade e peso /estatura com a intervenção; no entanto, as medianas de ferritina sérica aumentaram significativamente (p<0,01) em 25%, passando de 25,8 ng/dL para 33,1 ng/dL. Não foi observada variação significativa nos outros índices hematimétricos. Associação entre anemia e desnutrição não foi encontrada no presente estudo. O produto fortificado aumentou as reservas de ferro das crianças estudadas, constituindo uma alternativa viável para a prevenção da anemia ferropriva.
